Pomegranate Breakfast Parfait
A beloved fall treat on go. That’s what you’ll find here! Sunday is our typical meal prep day, getting our family ready for the upcoming week. This week we took a little break from our favorite overnight oats (click here for the apple pie overnight oats and here for the pomegranate blueberry overnight oats) and tried these out. Begin with some mason jars. Not the big ones you see for pickles and soups, the next size down. You can buy a set of mason jars for a good price here, especially if you have Amazon prime. I used 1/3 cup measurements for pouring in the layers. Start with the granola. I love making homemade granola, but when I don’t, we use our favorite local brand from our farmer’s market. Next add in yogurt. I make my own so that’s what is pictured here. A simple vanilla is perfect for this meal. Pour in the chia seeds. If you want less than the 1/3 cup that’s totally fine. I found that putting them between the layers of yogurt helped them soften up to be eaten. After the second layer of yogurt, drizzle in some pomegranate syrup. Yum!! I just love pomegranate season. This particular syrup can be purchased year-round here. Add in another layer of granola, then top with cocao nibs or a little dark chocolate. Mmm, this parfait is so perfect! We found that the parfaits stay fresh for up to 2 days. After that the granola gets a little soggy so keep that in mind when meal prepping.

Pomegranate Breakfast Parfaits

Ingredients:
2/3 cup granola
2/3 cup yogurt
1/3 cup or less chia seeds
1/3 cup pomegranate syrup
1/3 cup dark chocolate or cocao nibs

Directions:
Layer the parfait in 1/3 cup increments starting with granola.
Next pour in the yogurt, chia seeds, and yogurt again.
Drizzle in the pom syrup adding another granola layer to the top.
Finally, sprinkle the chocolate on top.
